Ground pretzels, 16 ounces

Butter, 1½ sticks
Strawberry jello, 3 ounces

Preparation
Take a large bowl and combine eggs with cream cheese, splenda and add the almond extract as well. Blend these ingredients together. Then, pour this mixture into a greased pan and bake at 350 degrees F. This will take around half an hour. Once done, remove it from the oven and allow it to cool down. Meanwhile, mix the vanilla extract along with the sour cream and a sprinkling of splenda in a bowl. Spread this over the pie. Bake it again for 10 minutes. Allow to cool down and then place it into the refrigerator overnight.

Chocolate Cheesecake Recipe

Ingredients
Low-carb chocolate cookie crumbs (1 cup)
Splenda – Granular (3 tablespoons)
Butter – melted (¼ cup)
Cream cheese (Three 8 ounce packages)
Eggs – separated (3)
Sour cream (1 cup)
Finely chopped macadamia nuts, almonds or pecans (½ cup)
Splenda – Granular (1 cup)
Low-carbohydrate melted dark chocolate (3 ounces)
Low-carbohydrate baking flour substitute (2 tablespoons)
Low-carbohydrate melted dark chocolate (6 ounces)

Preparation
In a large bowl, combine the cookie crumbs with butter. Add 3 tablespoons of granular splenda along with nuts. Press this mixture into the bottom of a pan. Chill this crust whilst your prepare the filling. Also, preheat the oven to 350 degrees F. Then, take a large bowl and whip the egg whites in this till it turns stiff.

Take another bowl and beat together sour cream and cream cheese along with the flour substitute. Add 1 cup of splenda. Add egg yolks one by one, to this mixture. Blend well. Add the whipped egg whites gently into this mixture. Now, spoon the whipped batter into the crust prepared earlier. Also add 6 ounces of melted chocolate gently into the cheese mixture.

Meanwhile, place the pan on the cookie sheet inside the preheated oven. Bake this preparation for 60 minutes. Once the cake sets, turn off the oven. Open the door of the oven and allow it to cool down. Once cool, place into the refrigerator and let it chill overnight.

Spread around 3 ounces of melted chocolate on a cookie sheet. Add the remaining amount of chopped nuts as a sprinkling over this. You can also scrape the chocolate from the pan and use these slivers on top or on the sides of the cake.

Strawberry and Lavender Shortcakes – a Tasty Dessert

Strawberry shortcakes are a dessert in the shortcake family of cakes. Below is a recipe showing how to make a delicious strawberry and lavender shortcake that can be enjoyed by friends and family at any time.

Ingredients

150 grams plain flour
25 grams of ground rice
125 grams of diced butter
50 grams of caster sugar
One tablespoon of lavender petals

To decorate:
250 grams of strawberries
150 millilitres of double cream
16 small lavender flowers
Sifted icing sugar

Place the ground rice and the flour into a mixing bowl or alternatively, use a food processor. Next, add the butter and rub it in using your fingertips until the mixture starts to resemble fine breadcrumbs.

Next, stir in the lavender petals and sugar and squeeze the crumbs together to form a smooth ball. Knead the mixture lightly and then roll out onto a lightly floured surface until it is 5mm thick. Stamp out 7.5cm circles using a round biscuit cutter. Move the mixture to an ungreased baking sheet and reknead the trimmings, continuing to roll and stamp out until you have created 16 biscuits.

Prick with a fork and bake in a preheated oven at 325 degrees fahrenheit for around twelve minutes until it is a golden colour. Then, leave it to cool on the baking tray.

For serving, halve four of the strawberries, and slice the rest of them. Whip up the cream and spoon it over eight of the biscuits. Next, top with the sliced strawberries and then onto the remaining biscuits. Spoon the rest of the cream on top and decorate with the reserved halved strawberries and sprigs of lavender. Dust lightly with the icing sugar. They are best eaten on the same day that they are filled, but the plain biscuits can be stored for up to three days in an airtight tin.

Buñuelos are deep fried fritters that originated from Spain. It’s one of the popular Mexican dessert recipes that is enjoyed at snack time.

Ingredients
½ cup orange juice (you can also substitute it with lemon)
1 tablespoon grated orange peel (or lemon peel)
½ cup of whole milk
1 cup all-purpose flour
5 tablespoons extra virgin olive oil
vegetable oil for deep frying
4 eggs
powdered sugar
¼ teaspoon salt
In a large pan, boil orange juice, milk, 5 tbs. olive oil, orange peel, and salt. With the help of a wooden spoon, stir in the flour till the dough becomes solid. One by one add all 4 eggs and stir continuously. Pour olive oil in a skillet and heat it to 375º F. Make 1 inch pieces of the dough and carefully fry them in the hot oil. Take them out once they are golden brown and drain extra oil on paper towels. Sprinkle some powdered sugar on top and serve them hot.

Apple Cinnamon Empanadas
Empanadas are traditional Mexican desserts from Spanish origin, which consists of bread and stuffings of different fruits. One of the popular Mexican dessert recipes, empanadas can be prepared with chicken, beef, eggs, and vegetables as well. This is one of my favorite Mexican dessert recipes; hope you like it.

Ingredients
Ready to cook pie dough
3 large lightly beaten eggs
1 Can of apple fillings (your choice of brand)
2 ½ cups all-purpose flour
½ cup unsalted butter, cut into small cubes
2 tablespoons of sugar
Salt to taste
Mix the flour, sugar, and salt in an electric mixer bowl on low speed. Add butter and keep mixing till it turns rough. Without stopping the mixer, add 2 beaten eggs and let the mixture combine properly. Stop the mixer and take the dough out on the kitchen counter top. Put some flour on counter top before placing the dough. Divide it in half and knead each halves into round balls. Put it in plastic wraps and keep the dough in the refrigerator for 1 hour. Now preheat the oven to 400° F. Open the can of apple filling and put it in a bowl. Add ¼ tablespoon of cinnamon to the filling. Bring the dough out and roll it on the floured surface. Cut the dough in round circles and fill the apples in it. Put another circle on the top and press the edges together with the help of a fork. Now take the beaten eggs and brush the empanadas. Sprinkle the tops with cinnamon and sugar. Take a greased cookie sheet and place the empanadas on it. Make couple of holes with the fork to let them cook properly. Bake the empanadas for 30 minutes or till they become golden brown.

Coconut Flan
Flan is an open pie, which looks similar to quiche. There are many versions to making a flan. And here’s one more…

Ingredients
3 large eggs
1 Can of sweetened condensed milk (your choice of brand)
2 teaspoons of vanilla extract
Fresh whipped cream, for garnish
¼ cup coconut flakes, for garnish
¼ cup coconut flakes, in cooking
¼ cup sugar
1 ½ cups of coconut milk
Before starting the procedure, preheat the oven to 325º F. In a small pan, melt the sugar and let it caramelize. Pour it in a flan dish and let it coat the entire bottom. Now in a large bowl, whisk the eggs till it gets foamy. Mix in the coconut and condensed milk, vanilla extract, and ¼ cup coconut. Pour the mixture in the flan dish and put that dish in a large baking pan, filling half of the pan with water. Put it in the preheated oven and bake for 1 hour. Let the flan set and check if it’s done, see if it jiggles a bit. If yes, then your flan is ready. Remove it from the oven and let it cool. Once it’s ready, turn it over a clean plate and cut into slices. Trim it with whipped cream and toasted coconut.
